Rx Girl Approved: Sweet Potato Apple Almond Crisp
While winter quickly approaches, it's never too late to enjoy a colorful casserole of sweet potatoes and apples. Carry over the traditional Thanksgiving and fall ingredients into the winter season to keep your tummy full and your cravings at bay. This recipe is quick, easy, and provides a wealth of healthy fats, proteins, and carbohydrates.
Sweet Potato Apple Almond Crisp
Serves 12
2 large sweet potatoes
3 apples
3 tbsp coconut oil
2 tsp cinnamon
1/2 cup almond meal
1/2 cup almond slices
Preheat oven to 375 degrees. After baking the potatoes (microwave them for about 6 minutes) I let them cool before slicing them along with the apples. Place them in a bowl and mix with the coconut oil and cinnamon. Spread into baking dish or onto a pizza pan and top with almond meal and almond slices. Bake for approximately 40-45 minutes.
Feel free to top with non-fat Greek yogurt, raisins, honey, or peanut butter! The possibilities are endless. Not only does the crisp deliver a satisfying combination of flavor, but sweet potatoes provide magnesium which is a stress reducing mineral that can be especially helpful to possess in abundance during the holidays.
