Protein Pancakes are probably one of the most well known low carb dishes but they are usually quite bland and lack flavor. After multiple attempts and experimenting with different variations, I’ve come up with my own chocolate cinnamon protein pancakes packed with a delicious flavor you’ll love! To anyone who is not a fan of chocolate….stay tuned for my vanilla and almond protein pancakes!
1 Scoop Chocolate Low Carb Protein (I used IsoPure)
1/3 c Unsweetened Almond Milk
1 Egg
1/2 oz Almonds (I used cocoa roasted ones)
1/2 Tbsp Unsweetened Cocoa Powder
1/2 Tbsp Cinnamon
3 Packets of Sweetener (I used PureVia)
1 Tbsp Olivio Butter
Sugar-free Syrup for Topping (Optional)
1. Take the almonds and crush them using a masher. It tends to make a mess so the easiest way I found to do this is to put them on a paper plate, cover them with another paper plate, and then mash them so that the crumbs don’t fly everywhere. You can also use a processor but i find that mashing them by hand keeps the chunks large enough so give the pancakes more of a “crunch”.
2. In a bowl, beat the egg and mix in protein, cocoa, cinnamon and sweetener
3. Pour about half the batter in a non-stick skillet on medium heat and sprinkle with half of the crushed almonds. (I don’t put the almonds in the batter because they sink to the bottom and you end up having your first pancake with barely any almonds and the second packed with almonds.)
4. Flip pancake when the batter starts to bubble and do the same for the remaining batter and almonds.
5. Serve on a plate and top with Olivio butter and sugar-free syrup!
This recipe yields 3 pancakes. The macros are for the whole batch so each pancake has about 90 calories, 11.5g of protein and 2.5 carbs
